When athlete is getting to elite competition…
-justified in using carbs in their performance
Example: Zach Bitter (World record holder 100 mile run)
-he lives and trains, essentially zero-carb, but
~in real competition and in high-intensity training for it,
~he will use carbs
But, “I know many endurance athletes who do NOT
flirt with carbs at all”
-even in Iron Man triathlon, they are still
all low-carb keto….and they do GREAT

Dr Anthony Chaffee: on conversion to animal-based diet…
-At the beginning, I quintupled my intake of calories
-like; 2-3 pounds of ribeye steak with butter
-“I dropped weight and I felt better”
Dr Ben Bikman: invoking thermodynamics in weight loss
was one of the greatest tragedies of out understanding
of human metabolism

Looking at nutrients as calorie sources is unfortunate…
-if looking at calories,
IMMEDIATELY DEVELOP PARADIGM BASED ON HUNGER
-imagine I plan a buffer, cooked by world’s best chefs
-what would you do to come to buffet as hungry as possible?
-students respond: eat less & exercise more
“Exactly: You would come as hungry as possible!
That is precisely what we have told people,
for 50 years, to do in order to lose weight!”

If you use those two steps: eat less & exercise more…
-sure, will lose a little weight initially, but
HUNGER ALWAYS WINS
so, you will gain it all back and then some more
-I want to shrink my fat cells….there are 2 ways:
1. low energy (carbs & fat)
This will cause brain to push HUNGER
2. lower insulin…even if eat a lot
You CANNOT STOP FAT CELL from
BREAKING FAT DOWN and LEAKING IT OUT

“So, even if you are still eating fat; it is coming in…
-the fat cell is leaking fat out FASTER than it is coming in”
-When insulin is LOW:
-metabolic rate is HIGHER (about 300 calories a day)
