-the fat of the brain is very high in both of these
-in some circles, these are not consider essential
because there are pathways to create them
(example: DHA from ALA (alpha-linolenic acid)
-ALA found in both plant and animal foods
-in many people, this pathway is unreliable
(average: less than 10% is converted)

"So, if you want DHA in your brain…
-you are taking your chances if you don't get it from
animal foods"
-plant food contain absolutely no DHA

There is a parent omega6 fatty acid, linoleic acid (LA)…
-in plants and animals
-there is a pathway to convert to arachidonic acid
-needed for brain function
-but arachidonic acid (like DHA) exists only in animal foods
-clinical trials, using this pathway…
-there is virtually no conversion of LA into arachidonic acid
-why doesn't this pathway work in studies?

1-NOT a hunger-based approach
You can't beat hunger
You must be satisfied, or will never stop eating
2-When insulin low, metabolic rate is higher
Even if eating more calories than needed,
You are pushing out more than normal
3-When making ketones; also excrete ketones
Ketones have caloric value, so when
you breath out or urinate out ketones
you are pushing out calories

These are calories that:
-did not need to be stored
-did not need to be burned
-are wasted energy (a GOOD THING for fat loss)
The body is determined to reconcile energy when insulin is low
"I have all this energy; I just don't need it"
Insulin wants to:
-store energy &
-slow metabolic rate &
-promote tissue growth

Question: What about Alzheimer's Disease?
-classic view: it is caused by plaques in the brain
-but, this is out of favor…
~lots of drugs reduce plaques, but no affect on disease
~people, with no disease, have had lots of plaques in brain

In insulin resistance:
-brain cannot use insulin well enough to…
-open glucose transporters to fuel the brain
-brain starts to go hungry &
~brain has very high metabolic rate, so: gap in energy
-gap could be filled by ketones, however
~in person who is insulin resistant:
They do not have any ketones!
"Insulin inhibits ketogenesis"


So: brain is:
-swimming in glucose that it cannot use
-calling out for ketones, but insulin won't let it get

Evidence that, if fill the energy gap with ketones…
-example, ketone esters (Dr Dom D'agostino's research)
-their cognition improves
So
-if a loved one has it, increase their ketones
-to keep it at bay:
~keep your brain insulin sensitive &
~give it ketones (its preferred fuel)

-he lives and trains, essentially zero-carb, but
~in real competition and in high-intensity training for it,

But, "I know many endurance athletes who do NOT
flirt with carbs at all"
-even in Iron Man triathlon, they are still
all low-carb keto….and they do GREAT

Dr Anthony Chaffee: on conversion to animal-based diet…
-At the beginning, I quintupled my intake of calories
-like; 2-3 pounds of ribeye steak with butter
-"I dropped weight and I felt better"
Dr Ben Bikman: invoking thermodynamics in weight loss
was one of the greatest tragedies of out understanding
of human metabolism

Looking at nutrients as calorie sources is unfortunate…
-if looking at calories,
IMMEDIATELY DEVELOP PARADIGM BASED ON HUNGER
-imagine I plan a buffer, cooked by world's best chefs
-what would you do to come to buffet as hungry as possible?
-students respond: eat less & exercise more
"Exactly: You would come as hungry as possible!
That is precisely what we have told people,
for 50 years, to do in order to lose weight!"

If you use those two steps: eat less & exercise more…
-sure, will lose a little weight initially, but
HUNGER ALWAYS WINS
so, you will gain it all back and then some more
-I want to shrink my fat cells….there are 2 ways:
1. low energy (carbs & fat)
This will cause brain to push HUNGER
2. lower insulin…even if eat a lot
You CANNOT STOP FAT CELL from
BREAKING FAT DOWN and LEAKING IT OUT

"So, even if you are still eating fat; it is coming in…
-the fat cell is leaking fat out FASTER than it is coming in"
-When insulin is LOW:
-metabolic rate is HIGHER (about 300 calories a day)

"dietary carbs are essential and were
essential to our ancestors in…

Shared a quote from the National Academy of Sciences…
"The lower limit of carbs in the human diet is zero"
-there is no such thing as an essential carbohydrate
The whole idea that our ancestors' brains evolved
because of eating lots of carbs…is utterly ridiculous
-many, many people afterward:
-absolute gratitude at learning this
reality of human biology & physiology

People think carbs are essential because…
-they mistake dietary carbs with blood glucose
-the brain does have some demand for some glucose
-the lower limit is unknown
Dr George F Cahill, fasting physiologist:
-put people's fasting glucose to 20mg/dL
-most researchers would say will lead to coma
-but, these people, who were ketone-adapted,
had NO DEFICIT TO COGNITION

Okay, so the brain has some requirement for some glucose…
-it is a minimal requirement…how so?
-a body that has 5 mM glucose; if you increase ketones to…
~1 or 2 or 3 mM, still LESS THAN BLOOD GLUCOSE:
-the brain has switched to its preferred fuel: KETONES
If ketones are half of glucose in the blood…
the brain is using DOUBLE the amount of KETONES

Newborn baby, whether breast or bottle fed…
-within an hour:
The baby is in a deeper state of ketosis, than
-an adult, even after a full day fast
-the baby will be at 2mM ketones in an hour
"For me, I have to fast for 36 hours to get to that point"

Clear: the natural state of our being is in ketosis…
-we humans are unique:
-only land-based mammals born obese
-and have a brain larger than the birth canal
We have very big, hungry brains & all of our baby fat:

Question: How is fasting different from starving?
-when fasting, ketones provide 70% of energy for brain
-glucose need is very, very low
-ketones are coming from body fat
-when running out of fat…body cannot make ketones from fat,
~so brain is dependent on glucose
~who has to pay? body makes glucose from muscle
"Having ketones means …
you are NOT in starvation.,,.
you are FASTING"

Even a 380 day fast that was done in Wales…
-he was morbidly obese
-under medical supervision

Result:
-because he was MAKING KETONES
